Charred Corn Salad

This is a refreshign delicious salad of charred corn, tomatoes, red onion and herbs tossed in a flavorful dressing.

Ingredients

  • 4 ears of corn, husked

  • 1 pint of cherry tomatoes, sliced in half

  • 1/2 red onion, finely chopped

  • 1/2 cup parsley, finely chopped

  • 1/4 cup red wine vinegar

  • 1 lime, juiced

  • 1 clove garlic, grated

  • 1/3 cup olive oil

  • Salt and pepper

Instructions

  1. Heat the grill to high.

  2. Drizzle corn with olive oil, salt and pepper. Grill for about 5 minutes per side until charred and tender. Cut the corn off the cobs.

  3. In a small bowl mix the red wine vinegar, lime juice, olive oil, garlic, salt and pepper.

  4. In a large bowl add the corn, tomatoes, onion, and parlsey. Toss with the dressing.

Takes 15 minutes
