Charred Corn Salad
This is a refreshign delicious salad of charred corn, tomatoes, red onion and herbs tossed in a flavorful dressing.
Ingredients
4 ears of corn, husked
1 pint of cherry tomatoes, sliced in half
1/2 red onion, finely chopped
1/2 cup parsley, finely chopped
1/4 cup red wine vinegar
1 lime, juiced
1 clove garlic, grated
1/3 cup olive oil
Salt and pepper
Instructions
Heat the grill to high.
Drizzle corn with olive oil, salt and pepper. Grill for about 5 minutes per side until charred and tender. Cut the corn off the cobs.
In a small bowl mix the red wine vinegar, lime juice, olive oil, garlic, salt and pepper.
In a large bowl add the corn, tomatoes, onion, and parlsey. Toss with the dressing.
Takes 15 minutes
