Chipotle Cauliflower Tacos
Roasted cauliflower smothered in chipotle and layered with avocado, radish, and lime sour cream - delicious!
Ingredients
1 head of cauliflower, chopped
1 can chipotle chiles in adobo
2 limes
2 avocados
6 radishes, chopped
1/4 cup cilantro, chopped
1/2 cup sour cream
1/4 cup olive oil
6 tortillas, flour or corn
1 tablespoon salt
Instructions
Heat oven to 450 degrees.
In a large bowl toss the cauliflower, oil, chipotles, salt and juice of one lime. Transfer to a sheet pan and roast for about 15 minutes until tender.
Mix the avocados, juice of half lime, cilantro, and radishes together into a mash.
Mix the sour cream and juice of half a lime.
Warm the tortillas in the oven or on the stove.
Top a tortillas with avocado mash, cauliflower, and sour cream. Enjoy!
