Carne Asada

This zesty flavorful marinated steak is perfect topped with cilantro and onion and nuzzled in a tortilla!

Ingredients

  • 2 pounds flank or skirt steak

  • 1 cup cilantro, chopped

  • 2 limes, juiced

  • 3/4 cup orange juice

  • 2 dried guajillo chilies

  • 1 cup coffee, hot fresh brewed

  • 4 cloves garlic

  • 1/4 cup olive oil

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 white onion, finely minced

  • Tortillas, limes and more cilantro for serving

Instructions

  1. Add the dried chilis to a cop of hot coffee to soften.

  2. In a blender or food processor add the cilantro, lime juice, oranage juice, coffee/chilis, garlic, olive oil, salt and pepper. Blend until smooth. Place the steak in a large ziploc bag and add the marinade. Marinade for at least 2 hours, ideally overnight.

  3. Heat grill to high heat. Remove the steak from the marinade and grill for about 4 minutes per side until cooked to medium rare. Let rest for 10 minutes and then thinly slice against the grain.

  4. Serve with warmed tortillas, onion, cilantro and lime.

Takes 20 minutes plush marinating time
