Butternut Squash Apple Bisque

At the first sight of fall, this soup of butternut squash, apples and crème fraiche is what I crave.   

Ingredients

  • 1 butternut squash, peeled and chopped into 1 in cubes

  • 3 honeycrisp apples, peeled and quartered

  • 2 onions, chopped

  • 4 garlic cloves, smashed

  • 1/4 cup olive oil

  • 1 teaspoon ground cayenne

  • 1/2 teaspoon ground cinnamon

  • 2 teaspoons salt

  • 1 teaspoon pepper

  • 6 cups chicken (or vegetable) stock

Instructions

  1. Heat oil in large pot. Add squash, apples, garlic, salt and pepper. Cook 10-12 minutes.

  2. Add stock and simmer for 1 1/2 hours

  3. Blend soup until smooth (I use an immersion blender)

  4. Stir in 1/4 cup creme fraiche and serve

Takes 2 hours (30 minutes active)
