Bourbon Beef Tenderloin
Perfectly roasted beef tenderloin is marinated in bourbon and mustard and crusted with pepper. This is a celebratory dinner favorite!
Ingredients
2.5 pound beef tenderloin
1/4 cup dijon mustard
1/4 cup bourbon
3 cloves garlic, grated
1 tablespoon salt
1 tablespoon pepper
Instructions
In a small bowl mix together the mustard, bourbon, and garlic. Coat the beef tenderloin and marinade for at least 1 hour.
Heat the oven or grill to 300 degrees.
Remove the beef from the marinade and coat with the salt and pepper.
Insert a temperature probe in the tenderloin and roast until the temperature reaches 130 degrees for medium rare, about 1 hour. Rest for 20 minutes before slicing.
Takes 1 hour 20 minutes (plus 1 hour marinade)
