Bourbon Beef Tenderloin

Perfectly roasted beef tenderloin is marinated in bourbon and mustard and crusted with pepper. This is a celebratory dinner favorite!

Ingredients

  • 2.5 pound beef tenderloin

  • 1/4 cup dijon mustard

  • 1/4 cup bourbon

  • 3 cloves garlic, grated

  • 1 tablespoon salt

  • 1 tablespoon pepper

Instructions

  1. In a small bowl mix together the mustard, bourbon, and garlic. Coat the beef tenderloin and marinade for at least 1 hour.

  2. Heat the oven or grill to 300 degrees.

  3. Remove the beef from the marinade and coat with the salt and pepper.

  4. Insert a temperature probe in the tenderloin and roast until the temperature reaches 130 degrees for medium rare, about 1 hour. Rest for 20 minutes before slicing.

Takes 1 hour 20 minutes (plus 1 hour marinade)
