Pizza Pasta

Who wouldn’t want a spoonful of pizza? Pasta is tossed in a creamy pepperoni tomato sauce and topped with cheese.

Ingredients

  • 1 pound penne pasta

  • 1 cup pepperoni, chopped

  • 1 onion, grated

  • 2 cloves garlic, grated

  • 1 teaspoon thyme

  • 1 can crushed tomatoes

  • 1 cup mascarpone cheese

  • 1 cup mozzarelle cheese

  • 1/4 cup basil, chopped

  • 1 tablespoon olive oil

Instructions

  1. Heat a large salted pot of water over high heat and cook the pasta to al dente.

  2. While the pasta cooks make the sauce. Heat oil in a large skillet over medium heat. Saute the pepperoni until crisp, then add the onion, garlic, thyme and season with salt and pepper. Cook for 5 minutes until tender. Add the crushed tomatoes and simmer for 10 minutes. Fold in the mascarpone cheese.

  3. Toss the pasta in the sauce with 1/4 cup of pasta water. Top with mozzarella and basil and enjoy.
