Black Eyed Pea Salad

This is a quick and delicious salad that is a picnic MVP!

Ingredients

  • 2 cans black eyed peas, drained and rinsed

  • 1 red bell pepper, diced

  • 1 jalapeno, diced

  • 1/2 red onion, diced

  • 1/4 cup parsley

  • 1/4 cup red wine vinegar

  • 1/4 cup olive oil

  • 2 teaspoons salt

  • 1 teaspoon pepper

Instructions

  1. Add the black eyed peas, red bell pepper, jalapeno, and red onion to a bowl.

  2. Mix together the vinegar, olive oil, salt, pepper and parsley.

  3. Toss the dressing in the bean salad and enjoy.

Takes 10 minutes

Serves 4-6
