White Bean Chili
A spicy, creamy blend of white beans, tomatoes, and peppers topped with cheddar.
Ingredients
1 onion, diced
3 cloves garlic, minced
1 red bell pepper, chopped
2 jalapeño peppers, sliced
1 28 ounce can whole peeled tomatoes
2 cans cannellini beans, drained and rinsed
2 tablespoons olive oil
2 tablespoons paprika
1 tablespoon chili powder
1 teaspoon cayenne
1 teaspoon cumin
Instructions
Heat oil in a pot over medium heat and sauté onion and garlic for 5 minutes. Add red pepper, jalapeño, paprika, chili powder, cayenne, cumin, salt and pepper and cook for another 5 minutes.
Add tomatoes, beans and 1/2 can of water. Break apart the tomatoes with a spoon and simmer for 30 minutes.
Top with shredded cheddar and sour cream.
Takes 45 minutes
