White Bean Chili

A spicy, creamy blend of white beans, tomatoes, and peppers topped with cheddar.

Ingredients

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1 red bell pepper, chopped

  • 2 jalapeño peppers, sliced

  • 1 28 ounce can whole peeled tomatoes

  • 2 cans cannellini beans, drained and rinsed

  • 2 tablespoons olive oil

  • 2 tablespoons paprika

  • 1 tablespoon chili powder

  • 1 teaspoon cayenne

  • 1 teaspoon cumin

Instructions

  1. Heat oil in a pot over medium heat and sauté onion and garlic for 5 minutes. Add red pepper, jalapeño, paprika, chili powder, cayenne, cumin, salt and pepper and cook for another 5 minutes.

  2. Add tomatoes, beans and 1/2 can of water. Break apart the tomatoes with a spoon and simmer for 30 minutes.

  3. Top with shredded cheddar and sour cream.

Takes 45 minutes
