Vegetable Stir Fry
Carrots, onion, mushrooms, bok choy, and snow peas stirred fried with a spicy delicious sauce.
Ingredients
2 cups shredded carrots
1 onion, sliced
8 ounces mushrooms, sliced
1 bunch bok choy, sliced
6 ounces snow peas
1/4 cup hoisin sauce
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 teaspoon cornstarch
2 tablespoons sambal oelek (use less or none depending on how spicy you want it)
1 tablespoon ginger, grated
2 garlic cloves, grated
2 tablespoons vegetable oil
Salt and pepper
1 cup rice, cooked
Instructions
Heat oil in a skillet over medium high heat. Toss in all the veggies and saute for 5-8 minutes until they start to get tender.
Mix the hoisin sauce, soy sauce, vinegar, sambal, ginger, garlic, and cornstarch together and toss in with the veggies. Saute for 5 minutes longer until the veggies are tender.
Serve with rice.
Note: I can’t get my family to eat this many vegetables so I usually cut up some hotdogs, mix with some soy sauce and serve with rice (don’t judge me!). Also a fried egg is a great addition!
