Vegetable Stir Fry

Carrots, onion, mushrooms, bok choy, and snow peas stirred fried with a spicy delicious sauce.

Ingredients

  • 2 cups shredded carrots

  • 1 onion, sliced

  • 8 ounces mushrooms, sliced

  • 1 bunch bok choy, sliced

  • 6 ounces snow peas

  • 1/4 cup hoisin sauce

  • 2 tablespoons soy sauce

  • 2 tablespoons rice vinegar

  • 1 teaspoon cornstarch

  • 2 tablespoons sambal oelek (use less or none depending on how spicy you want it)

  • 1 tablespoon ginger, grated

  • 2 garlic cloves, grated

  • 2 tablespoons vegetable oil

  • Salt and pepper

  • 1 cup rice, cooked

Instructions

  1. Heat oil in a skillet over medium high heat. Toss in all the veggies and saute for 5-8 minutes until they start to get tender.

  2. Mix the hoisin sauce, soy sauce, vinegar, sambal, ginger, garlic, and cornstarch together and toss in with the veggies. Saute for 5 minutes longer until the veggies are tender.

  3. Serve with rice.

Note: I can’t get my family to eat this many vegetables so I usually cut up some hotdogs, mix with some soy sauce and serve with rice (don’t judge me!). Also a fried egg is a great addition!
