Sticky Baby Back Ribs

These ribs are marinated in soy, ginger, and sambal and glazed with a sticky hoisin honey sauce. They take a long time, but they’re easy and worth it!

Ingredients

  • 1 slab baby back ribs

  • 1/4 cup soy sauce

  • 4 tablespoons rice vinegar

  • 2 tablespoons canola oil

  • 2 tablespoons brown sugar

  • 3 garlic cloves, grated

  • 1 tablespoon ginger, grated

  • 1 tablespoon sambal

  • 1 tablespoon salt

  • 1/2 cup hoisin

  • 2 tablespoons honey

  • 1 lime, wedged

  • 1/4 cup cilantro, roughly chopped

Instructions

  1. In a small bowl mix the soy sauce, 2 tablespoons rice vinegar, oil, brown sugar, garlic, ginger, sambal and salt together. Pour over ribs, cover and marinate overnight.

  2. Heat the oven (or grill or smoker) to 225. Place the ribs bone side down in the oven and cook for 2 hours.

  3. Meanwhile make the glaze by mixing the hoisin, honey and rice vinegar in a small pot. Heat over medium heat for a few minutes until slightly thickened.

  4. Increase the heat to 375. Coat the ribs with half the glaze. Wrap the ribs in 2 layers of foil and cook for another hour.

  5. Cut the ribs, add drizzle with the rest of the glaze, top with cilantro and serve with lime.

Takes 3 hours (+ marinate overnight)
