Soy Lime Pork Tenderloin with Baby Bok Choy
This pork tenderloin gets a ton of flavor from soy sauce and lime juice and is roasted with delicious gingery baby bok choy.
Ingredients
1 pound pork tenderloin
3 baby bok choy, sliced in half lengthwise
1/4 cup soy sauce
1 lime, juiced
1 teaspoon salt
1 tablespoon ginger, grated
1 tablespoon sesame oil
2 tablespoons vegetable oil
Instructions
Heat the oven to 400 degrees.
Pierce pork all over with a knife and trim any excess fat or silver skin. Place the pork in a ziplock bag and add soy sauce, lime juice, and salt and let sit for 15 minutes.
In a large bowl toss the bok choy with sesame oil and ginger.
Heat vegetable oil in a large skillet. Sear the pork tenderloin on each side, then place the bok choy cut side down in the pan. Transfer the pan to the oven and cook for 10-15 minutes until the pork is cooked through, internal temp of 145.
