Soy Lime Pork Tenderloin with Baby Bok Choy

This pork tenderloin gets a ton of flavor from soy sauce and lime juice and is roasted with delicious gingery baby bok choy.

Ingredients

  • 1 pound pork tenderloin

  • 3 baby bok choy, sliced in half lengthwise

  • 1/4 cup soy sauce

  • 1 lime, juiced

  • 1 teaspoon salt

  • 1 tablespoon ginger, grated

  • 1 tablespoon sesame oil

  • 2 tablespoons vegetable oil

Instructions

  1. Heat the oven to 400 degrees.

  2. Pierce pork all over with a knife and trim any excess fat or silver skin. Place the pork in a ziplock bag and add soy sauce, lime juice, and salt and let sit for 15 minutes.

  3. In a large bowl toss the bok choy with sesame oil and ginger.

  4. Heat vegetable oil in a large skillet. Sear the pork tenderloin on each side, then place the bok choy cut side down in the pan. Transfer the pan to the oven and cook for 10-15 minutes until the pork is cooked through, internal temp of 145.
