Roasted Chicken Legs with Fennel and Celery Salad

This elevated version of buffalo wings is simply delicious. I love to cook these in the smoker, but an oven works just as well.

Ingredients

  • 1 pound chicken drumsticks

  • 1 tablespoon paprika

  • 1 teaspoon salt

  • ½ teaspoon pepper

  • 1 bulb fennel, thinly sliced

  • 2 ribs celery, thinly sliced

  • 1 tablespoon lemon juice

  • 2 tablespoon olive oil

  • ¼ cup sambal oelek (or hot sauce of choice)

  • 3 tablespoons butter

Instructions

  1. Toss chicken with paprika, salt, and pepper. If you have time marinate for 1-2 hours.

  2. Preheat oven to 350 degrees

  3. Roast chicken for 40-50 minutes until cooked through

  4. In the meantime make fennel/celery salad and hot sauce.

  5. For the salad add thinly sliced fennel and celery to a bowl, mix with 1 tablespoon lemon juice and 2 tablespoons olive oil

  6. To make the hot sauce, melt butter, then mix in hot sauce.

  7. Serve chicken with hot sauce, salad and dipping sauces of choice
