Sausage and Peppers

This is such a satisfying blend of Italian sausage, peppers, onions, and tomato. It is great with crusty bread or assembled into a sandwich.

Ingredients

  • 2 red bell peppers, chopped

  • 1 red onion, sliced

  • 1 28 ounce can whole tomatoes

  • 2 tablespoons olive oil

  • 2 garlic cloves, grated

  • 1/2 teaspoon crushed red pepper

  • 1 pound Italian sausage links

  • 2 teaspoons red wine vinegar

  • 1/2 cup parmesan cheese, grated

  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400 degrees.

  2. Heat olive oil in an ovenproof skillet. Add the bell peppers, onion, oil and red pepper and cook for about 10 minutes. Add the tomatoes and garlic. Break the tomatoes up with a spoon and season with salt and pepper.

  3. Prick the sausages in a few places and nestle them in the peppers, onions and tomatoes.

  4. Roast for 20 minutes until the sausages are cooked through.

  5. Stir in the vinegar, sprinkle with parmesan cheese and serve with crusty bread.

Takes 30 minutes
