Paul’s Queso Tacos

I really don’t like ground beef tacos, but they are my husbands absolute favorite. He challenged me to make seasoning better than Ortega and I’m not sure this is a selling point, but this is it! I love these because they are covered in queso - and really everything is better with queso.

Ingredients

  • 2 tablespoons chili powder

  • 1 tablespoon cumin

  • 2 teaspoons corn starch

  • 1 teaspoon salt

  • 1 teaspoon paprika

  • 1 teaspoon coriander

  • 1/2 teaspoon red pepper flakes

  • 1 pound ground beef

  • 1 garlic clove, grated

  • 1 pound processed American cheese (Velveeta), cut into chunks

  • 3/4 cup cream

  • 1 can green chiles

  • Flour tortilla shells

  • Jalapeño, sliced

Instructions

  1. Heat 1 tablespoon olive oil in skillet and add garlic. Cook for about 1 minute then add ground beef.

  2. Mix chili powder, cumin, corn starch, salt, paprika, coriander and red pepper flakes.

  3. Once ground beef is browned, add seasoning mix and 1/4 cup water. Mix and simmer until sauce is thickened

  4. In the meantime make the queso by adding the cheese, cream and chiles into a microwave safe bowl. Microwave for 3 minutes, stir then microwave for another 3 minutes.

  5. Heat the tortilla shells in the oven or on the stove, then add ground beef, queso and jalapeno slices (or toppings of choice) and enjoy.

Takes 15 minutes
