Pork Chop with Capers and Olives

This is a flavorful grilled pork chop with a bright salsa of olives, capers, parsley, and lemon.

Ingredients

  • 2 porterhouse pork chops

  • 1 tablespoon dijon mustard

  • 2 cloves garlic, smashed

  • 1 tabelspoon rosemary, chopped

  • 1 teaspoon thyme, chopped

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1 cup green olives, chopped

  • 1/4 cup capers

  • 1 cup parsley, chopped

  • 1 lemon, zested and juiced

  • 1/4 cup olive oil

  • 1/2 teaspoon red pepper flakes

Instructions

  1. In a small bowl mix the mustard, 2 tablespoons olive oil, rosemary, thyme, salt and pepper. Rub all over the pork chops.

  2. Heat the grill to high. Grill the pork chop for about 7 minutes per side until cooked to an internal temp of 145 degrees. Rest the pork for 5 minutes before serving.

  3. While the pork cooks combine the olives, capers, parsley, lemon juice and zest, 2 tablespoons olive oil and red pepper flakes.

  4. Top the pork with the salsa and enjoy!
