Parmesan Roasted Chicken

This is the best chicken I’ve ever made. It is perfectly juice, a little lemony, and crusted with parmesan cheese.

Ingredients

  • 4 bone-in skin on chicken breast (or 2 breasts, 2 thighs)

  • 1 lemon

  • 2 teaspoons salt

  • 1 teaspoon pepper

  • 1/2 teaspoon red pepper flakes

  • 2 tablespoons olive oil

  • 1/2 cup parmesan cheese, grated

Instructions

  1. Zest lemon and mix zest with salt, pepper, and red pepper flakes. Pat the chicken dry with a paper towel, then rub the salt mixture over it. Let sit at room temperature for 15 - 30 minutes.

  2. Preheat oven to 425 degrees. Place chicken breast side up on a sheet pan and drizzle with olive oil.

  3. Roast chicken for 20 minutes. Sprinkle all over with parmesan then roast for another 15 to 20 minutes until cooked through.

Takes 60 minutes
