Orange Chicken and Broccoli

Tasty American Chinese inspired orange chicken that’s easier than takeout.

Ingredients

  • 1 pound boneless chicken breasts or thighs, cut into small pieces

  • 1 head of broccoli, cut into florets

  • 2 eggs

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1/2 cup flour

  • 1/2 cup + 1 tablespoon corn starch

  • 1/4 cup orange juice

  • 1/4 cup chicken stock

  • 1/4 cup soy sauce

  • 1/4 cup rice vinegar

  • 1 tablespoon grated ginger

  • 3 cloves garlic, grated

  • 1 tablespoon sugar

  • 1 cup canola oil

  • Rice for serving

Instructions

  1. Heat oil in a deep pan over medium high heat.

  2. Mix eggs, salt and pepper in a bowl. In another bowl mix the flour and 1/2 cup corn starch. Add the chicken pieces to the egg mixture and coat well. Then add to the flour and corn starch to coat.

  3. Mix the orange juice, soy sauce, chicken stock, vinegar, garlic, ginger, sugar and 1 tablespoon corn starch together.

  4. Once the oil is heated at the chicken and cook for about 5 minutes per side until golden brown. Remove from the oil and set aside. Add the broccoli to the hot oil and cook for a couple minutes until just tender. Remove and set aside.

  5. Drain the oil from the pan and add the sauce. Simmer to reduce slightly then return the chicken and broccoli to coat in the sauce.

  6. Serve over rice.

Note: If your kids (or husband) don’t like the sauce, leave out for some quick chicken nuggets.
