Chorizo Tacos

Chorizo cooked with onions and tomatoes and layered in a tortilla shell with cheese and peppers.

Ingredients

  • 1 pound ground chorizo

  • 1 onion, grated

  • 1 14 ounce can crushed tomatoes

  • 2 tablespoons tomato paste

  • 1 cup monterey jack cheese

  • 1/4 cup banana peppers

  • Tortilla shells

  • 1 tablespoon olive oil

  • Salt and pepper

Instructions

  1. Heat olive oil in a large pan. Add the onion and saute for a few minutes until soft. Add the chorizo and a pinch of salt and pepper. Cooked until cooked through.

  2. Warm the tortilla shells in the oven or over the stove flame.

  3. Top a tortilla shell with chorizo, cheese, and banana peppers.

Takes 15 minutes
