Chorizo Tacos
Chorizo cooked with onions and tomatoes and layered in a tortilla shell with cheese and peppers.
Ingredients
1 pound ground chorizo
1 onion, grated
1 14 ounce can crushed tomatoes
2 tablespoons tomato paste
1 cup monterey jack cheese
1/4 cup banana peppers
Tortilla shells
1 tablespoon olive oil
Salt and pepper
Instructions
Heat olive oil in a large pan. Add the onion and saute for a few minutes until soft. Add the chorizo and a pinch of salt and pepper. Cooked until cooked through.
Warm the tortilla shells in the oven or over the stove flame.
Top a tortilla shell with chorizo, cheese, and banana peppers.
Takes 15 minutes
