Lamb Chops with Orzo
These lamb chops marinated in lemon juice, broiled for 8 minutes and served with a simple orzo pasta with lemon, feta and mint.
Ingredients
6-8 lamb loin chops
2 lemons, juiced
1/2 cup olive oil
1 teaspoon pepper
1/2 teaspoon salt
1 cup Orzo
1 cup feta, crumbled
1 tablespoon mint, chopped
Instructions
Toss the lamb chops in the juice of 1 lemon, salt, pepper, and 1/4 cup oil.
Bring a small pot of salted water to a boil, then cook the orzo until al dente.
While the pasta cooks, broil the lamb chops for 8-10 minutes.
When the pasta is cooked, drain and toss with the juice of half a lemon, feta, mint, 1/4 cup olive oil, and a bit more salt and pepper.
Serve the lamb with the orzo and the remaining lemon and enjoy.
