Jalapeno Popper Chicken

This chicken is stuffed with jalapenos, cream cheese and cheddar cheese for a cheesy, spicy delicious dinner. (I leave out the jalapenos for the kids)

Ingredients

  • 4 boneless chicken breasts

  • 3 tablespoons cream cheese, room temperature

  • 1/4 cup cheddar cheese, shredded

  • 1 teaspoon garlic powder

  • 2 jalapenos, seeded and sliced

  • 2 tablespoons olive oil

  • Salt and pepper

Instructions

  1. Heat the oil in an ovenproof skillet over medium heat.

  2. Mix the cream cheese, cheddar cheese, and garlic powder.

  3. Slice the chicken crosswise almost through the chicken (but not all the way!) to make a pocket. Stuff each chicken breast with 2 tablespoons of the cheese filling and a couple slices of jalapeno. Season the outside of the chicken with salt and pepper.

  4. Add the chicken to the skillet and saute for about 7 minutes per side until golden brown and cooked through.

Takes 25 minutes
