Roasted Garlic Salmon and Baby Potatoes

This is salmon is perfect for a weeknight – and for people (my husband) who say they (he) doesn’t like salmon. 

Ingredients

  • 1 pound fillet of salmon (skin on)

  • 3 cloves of garlic, grated

  • 1/4 cup olive oil

  • 1 lemon

  • 4-5 baby golden potatoes, halved

  • Salt and pepper

Instructions

  1. Preheat oven or grill to 450 degrees

  2. Brush sheet pan with olive oil and add potatoes flesh side down, salmon skin side down

  3. Smear grated garlic on salmon

  4. Drizzle everything with olive oil and season with salt and pepper

  5. Roast for 20 minutes until salmon and potatoes are cooked through

  6. Serve with lemon

Takes 25 minutes
