Chipotle Pork Tacos

This is such a quick and tasty weeknight meal. Crispy bits of pork tenderloin are tossed with chipotle peppers and topped with pineapple in a tortilla.

Ingredients

  • 1 pork tenderloin, cut into bite sized pieces

  • 2 chipotle peppers, chopped

  • 1 lime, juiced

  • 3 cloves garlic, grated

  • 1 pineapple, chopped

  • 1 jalapeno, sliced

  • 2 tablespoons canola oil

  • 1 teaspoon salt

  • corn or flour tortillas

Instructions

  1. In a large bowl add the pork, chipotles, lime juice, salt and garlic.

  2. Heat the oil in a skillet over medium high heat. Add the pork and cook for about 5 minutes per side until crisp on the outside and just cooked through.

  3. Warm tortillas in the oven or stove.

  4. Top a tortilla with pork, pineapple and jalapeno.

Takes 20 minutes
