Chicken Parm Meatball Sliders
These are so easy, delicious and the best meatballs ever according to my husband. I love these in sliders, but you could serve with spaghetti or crusty bread.
Ingredients
1 pound ground chicken
1/2 cup ground parmesan cheese
1/2 cup panko bread crumbs
1 egg
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Italian seasoning
1 jar marinara sauce
1 ball mozzarella, sliced
12 brioche sliders
2 tablespoons olive oil
Instructions
In a large bowl, combine the chicken, bread crumbs, parmesan, egg, salt, pepper and Italian seasoning. Form into 2 inch balls.
Heat oil in a large skillet over medium high heat. Add the balls in a single layer and cook for 3 minutes per side. Add the marinara sauce and partially cover for 5 minutes. Uncover and top the meatballs with a slice of mozzarella. Cover for a minute until the cheese is melty.
Serve the meatballs in a slider.
