Bucatini Carbonara

This is a family favorite. The eggs and cheese make a delicious creamy sauce and you can’t go wrong with bacon. Bonus - it is ready in 15 minutes.

Ingredients

  • 1 pound bucatini

  • 4 egg yolks

  • 1 whole egg

  • 1 cup grated parmesan

  • 2 cloves garlic, minced

  • 1/2 teaspoon red pepper flakes

  • Salt and pepper

  • 4 slices bacon, chopped

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta to al dente.

  2. While the pasta cooks add the bacon to a pan large enough to hold the pasta and cook until just crisp. Remove and set aside. Drain all but 2 tablespoons bacon grease.

  3. In a small bowl, mix together the eggs, garlic, red pepper flakes, parmesan cheese and salt and pepper. Fold in the bacon.

  4. When the pasta is cooked, reserve 1/2 cup of pasta water. Whisk the pasta water into the egg mixture to temper the eggs. Transfer the cooked pasta to the pan with the bacon grease, add the egg mixture and toss until mixed well and creamy. Add a bit more pasta water if needed.

  5. Top with additional parmesan and enjoy.
