Buttermilk Brined Chicken Wings

These wings are brined in a spicy buttermilk and grilled to perfection. Perfect for game day!

Ingredients

  • 3 pounds chicken wings

  • 4 cups buttermilk

  • 1 tablespoon paprika

  • 1 tablespoon chili powder

  • 1 tablespoon cumin

  • 1 teaspoon cayenne pepper

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1/4 cup pickle juice

  • 1/4 cup Worcestershire sauce

  • 4 cloves garlic, smashed

  • celery, carrots, blue cheese dressing, and buffalo sauce for serving

Instructions

  1. In a bowl mix together the buttermilk, paprika, chili powder, cumin, cayenne pepper, salt, pepper, garlic, pickle juice and Worcestershire.

  2. Add the chicken wings to a large ziploc bag and pour the buttermilk mixture over the chicken. Brine for at least 6 hours to overnight.

  3. Heat grill to 350 degrees. Remove the wings from the marinade and grill for about 8 minutes per side until charred and cooked through.

  4. Serve with veg and dipping sauces of choice.

Takes 20 minutes + brining time
