Bucatini with Bacon and Tomato Sauce
This fast and delicious pasta is tossed with bacon, tomatoes and lots of parmesan cheese.
Ingredients
1 pound bucatini
4 shallots, sliced
6 slices bacon, chopped
2 garlic cloves, grated
1 tablespoon Calabrian chile (or 1 teaspoon red pepper flakes)
28 ounce crushed tomatoes
1/2 cup parmesan cheese, grated
Instructions
Bring a large pot of salted water to a boil and cook the bucatini to al dente.
While the pasta cooks, add the bacon, shallots, garlic and chile to a large skillet and cook over medium heat until the bacon starts to crisp up. Add the tomatoes, increase the heat to bring to a boil, then simmer for 15 minutes.
Once cooked, drain the pasta, reserving 1/2 cup of pasta water and add the pasta and water to the sauce tossing to coat. Serve and top with parmesan.
