Bucatini with Bacon and Tomato Sauce

This fast and delicious pasta is tossed with bacon, tomatoes and lots of parmesan cheese.

Ingredients

  • 1 pound bucatini

  • 4 shallots, sliced

  • 6 slices bacon, chopped

  • 2 garlic cloves, grated

  • 1 tablespoon Calabrian chile (or 1 teaspoon red pepper flakes)

  • 28 ounce crushed tomatoes

  • 1/2 cup parmesan cheese, grated

Instructions

  1. Bring a large pot of salted water to a boil and cook the bucatini to al dente.

  2. While the pasta cooks, add the bacon, shallots, garlic and chile to a large skillet and cook over medium heat until the bacon starts to crisp up. Add the tomatoes, increase the heat to bring to a boil, then simmer for 15 minutes.

  3. Once cooked, drain the pasta, reserving 1/2 cup of pasta water and add the pasta and water to the sauce tossing to coat. Serve and top with parmesan.

Takes 20 minutes
