Spicy Black Beans and Rice

This is really filling, easy and delicious blend of rice, black beans, habanero peppers, and kale.

Ingredients

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 habanero peppers, minced

  • 2 cans black beans, drained and rinsed

  • 1/2 cup chicken stock

  • 1 bunch kale, chopped

  • 1 cup white rice

  • 1 1/2 cup water

  • 1/4 cup cilantro, chopped

  • 2 tablespoons olive oil

  • Salt and pepper

Instructions

  1. Bring 1 1/2 cup water and 1 teaspoon salt to a boil add the rice, cover and reduce to simmer for 15 minutes.

  2. While the rice cooks, heat oil in a skillet over medium heat. Add the onion and cook for 5 minutes, then add the garlic and habanero and cook for 2 minutes.

  3. Add black beans, kale and chicken stock and cook for 5 minutes

  4. Fold in the rice and cilantro.

Takes 20 minutes
