Grilled Barbeque Chicken Bowls

Chicken grilled and slathered with barbeque sauce. Tossed with grilled pineapple, red peppers and served over rice.

Ingredients

  • 1 pound boneless skinless chicken

  • 1 pineapple, sliced

  • 1 red bell pepper, quartered

  • 1/4 cup olive oil

  • 1 teaspoon paprika

  • 1 teaspoon cumin

  • 1 teaspoon allspice

  • 1 teaspoon salt

  • 1 cup rice, cooked

  • 1/4 cup cilantro

  • 1/2 cup Simple Barbeque Sauce, or store bought

  • 1 lime, wedges

Instructions

  1. Heat grill to high.

  2. Top chicken with olive oil, paprika, cumin, allspice and salt.

  3. Add the chicken, pineapple, and red pepper to the grill.

  4. After about 6 minutes baste the chicken with barbecue sauce and flip the chicken, pineapple and red pepper. Coat the other side of the chicken with barbeque sauce as well.

  5. Once cooked through remove everything with the grill. Add more barbeque sauce to the chicken.

  6. Chop everything into bite sized pieces and place a top a bed of rice, top with cilantro and serve with lime.

Takes 20 minutes
