Smoked Brisket

This brisket is rubbed with a delicious spice mixture and smoked low and slow for hours - and it is totally worth it. I love my wood pellet smoker, but you can totally grill or even roast this.

Ingredients

  • 1 2-3 pound brisket

  • 4 cloves garlic, grated

  • 1 tablespoon onion powder

  • 1 tablespoon paprika

  • 2 teaspoons allspice

  • 1 tablespoon salt

  • 1 tablespoon pepper

Instructions

  1. Mix together garlic, onion powder, paprika, allspice, salt and pepper. Rub all over the brisket and marinate overnight

  2. Heat smoker to 225 degrees. Place the brisket directly on the grates fat side down and cook for 3-4 hours until internal temp reaches 160 degrees.

  3. Remove the brisket and wrap to 2 layers of foil. Increase the temp to 275 degrees and cook until internal temp reaches 200 degrees, 2-3 more hours.

  4. Remove from the grill and let rest for 1 hour. Slice against the grain to 1/4 inch slices.

Takes 8 hours (plus overnight marinade)
