Shrimp Stew

A quick stew of tomatoes, white beans and kale with perfectly cooked shrimp make a delicious and hearty weeknight dinner.

Ingredients

  • 1 pound shrimp

  • 1 can whole tomatoes

  • 1 can crushed tomatoes

  • 1 cup chicken stock

  • 2 cans navy beans

  • 2 cloves garlic, minced

  • 1 teaspoon chile flakes

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 bunch kale, chopped

  • 1 lemon, for serving

  • 2 tablespoons olive oil

Instructions

  1. Heat oil in saute pan over medium heat

  2. Add garlic and red pepper flakes and cook for 2 minutes

  3. Add the tomatoes, breaking apart the whole tomatoes. Add the beans, chicken stock, salt and pepper and simmer for 15 minutes.

  4. Toss in the shrimp and kale. Cook for 5 minutes until the shrimp is just cooked through.

  5. Serve with lemon and bread.

Takes 20 minutes
