Shrimp Stew
A quick stew of tomatoes, white beans and kale with perfectly cooked shrimp make a delicious and hearty weeknight dinner.
Ingredients
1 pound shrimp
1 can whole tomatoes
1 can crushed tomatoes
1 cup chicken stock
2 cans navy beans
2 cloves garlic, minced
1 teaspoon chile flakes
1 teaspoon salt
1/2 teaspoon pepper
1 bunch kale, chopped
1 lemon, for serving
2 tablespoons olive oil
Instructions
Heat oil in saute pan over medium heat
Add garlic and red pepper flakes and cook for 2 minutes
Add the tomatoes, breaking apart the whole tomatoes. Add the beans, chicken stock, salt and pepper and simmer for 15 minutes.
Toss in the shrimp and kale. Cook for 5 minutes until the shrimp is just cooked through.
Serve with lemon and bread.
