Roasted Salmon with Spicy Rosemary Butter

This salmon is coated with spicy rosemary butter and cooked with potatoes and lemons on a sheet pan.

Ingredients

  • 1 pound salmon fillet

  • 2 tablespoons butter, room temp

  • 1 tablespoon rosemary, chopped

  • 1 teaspoon cayenne pepper

  • 4 small red potatoes, sliced

  • 1/4 cup parsley, chopped

  • 1/4 cup olive oil

  • 1 lemon, cut in quarters

Instructions

  1. Heat oven to 450 degrees

  2. Mix the butter, cayenne, and rosemary together

  3. Place the salmon on a sheet pan skin side down and smear the butter over the top of the salmon. Add the potatoes and drizzle with olive oil. Top everything with pinch of salt and pepper. Add the lemon flesh side down.

  4. Roast for 20 minutes until the salmon and potatoes are cooked through.

  5. Top with parsley and serve with the lemon.
