Roasted Salmon with Broccoli

This flavor packed sheet pan dinner comes together in less than 30 minutes. The sauce of ginger, soy sauce, rice vinegar, honey, chili sauce, and scallions is the star.

Ingredients

  • 4 6 ounce salmon fillets

  • 1/4 cup soy sauce

  • 2 tablespoons rice vinegar

  • 1 tablespoon ginger, grated

  • 1 tablespoon honey

  • 1 teaspoon sambal oelek (or siracha)

  • 1 bunch broccoli, cut into pieces

  • 3 tablespoons vegetable oil

Instructions

  1. Preheat oven to 425 degrees

  2. In a bowl whisk together soy sauce, vinegar, 1 tablespoon oil, honey, ginger, and chile sauce.

  3. Pat the salmon dry and season with salt and pepper then coat the salmon with half the marinade. Set aside for 10 minutes while the broccoli roasts.

  4. Toss the broccoli with the rest of the oil on a sheet pan. Roast for 10 minutes. Add the salmon and roast for 10-15 minutes until salmon is cooked through.

  5. Serve with the reserved sauce drizzled over.
