Roasted Pork and Fennel

This is a great one-skillet meal of favorable pork quickly marinated with dijon mustard, garlic, and lemon and roasted alongside fennel. You could easily swap fennel for another vegetable, but you'd be making a mistake.

Ingredients

  • 1 pound pork tenderloin

  • 2 tablespoons dijon mustard

  • 4 tablespoons olive oil

  • 2 lemons

  • 1 tablespoon rosemary, chopped

  • 2 garlic cloves, chopped

  • 2 bulbs fennel, sliced

  • 1/4 cup grated parmesan

  • Salt and pepper

Instructions

  1. Preheat oven to 400 degrees

  2. Mix dijon mustard, 2 tablespoons olive oil, juice of 1 lemon, rosemary, and salt and pepper

  3. Pierce the pork all over with a knife, coat pork tenderloin with marinade and let sit 15 minutes

  4. Heat remaining olive oil in oven proof skillet and sear pork tenderloin

  5. Add fennel slices to pan with pork and roast for 10-15 minutes until internal temperature reaches 145.

  6. Toss fennel with parmesan and serve with lemon wedges.
