Pulled Pork Quesadilla

This is dish I tried with leftover pulled pork that was so good I wrote it down! Pulled pork is cooked with jalapenos and blackbeans then layered in a tortilla with lots of cheese.

Ingredients

  • 2 cups leftover Barbeque Pulled Pork

  • 1 can black beans

  • 2 jalapenos, chopped

  • 2 garlic cloves, chopped

  • 2 cups monterey jack cheese, shredded

  • 4 tortilla shells

  • 2 tablespoons olive oil

Instructions

  1. Heat a skillet over medium heat and add the pulled pork, black beans, jalapenos, and garlic. Saute until warmed through.

  2. In a separate skillet heat olive oli over medium heat and add a tortiall shell, add some filling, top with cheese and cook until crisp on the outside and melty on the inside. Repeat with remaining tortillas.

Takes 15 minutes
