Pineapple Pork

This pork gets a ton of flavor by being marinated in pineapple puree and topped with more pineapple.

Ingredients

  • 1 pork tenderloin

  • 1 pineapple, diced

  • 1/4 cup red onion, diced (about 1/2 onion)

  • 1/2 cup cilantro, chopped

  • 1 teaspoon salt

  • 1 tablespoon soy sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon sugar

  • 2 tablespoons olive oil

  • 1 cup rice, cooked

Instructions

  1. Cut the pork tenderloin into bit sized pieces

  2. In a large bowl mix the pineapple, red onion, cilantro, salt, soy sauce, rice vinegar, and sugar together. Transfer about half of the pineapple mixture and puree in the food processor or using an immersion blender.

  3. Pour the pureed pineapple mixture over the pork and marinate for 10 minutes.

  4. Heat olive oil in a skillet to medium high. Sauté the pork for 2 minutes then toss in the pineapple mixture and cook for another 2 minutes until the pork is just cooked through and the pineapple is slightly caramelized.

  5. Serve over rice and enjoy.
