Sheet Pan Nachos
You can’t go wrong with nachos for dinner. Tortilla chips, spiced ground beef, lots of melty cheese, topped with fresh guac and chipotle sour cream.
Ingredients
2 tablespoons chili powder
1 tablespoon cumin
2 teaspoons cornstarch
1 teaspoon salt
1 teaspoon paprika
1 teaspoon coriander
1/2 teaspoon red pepper flakes
1 pound ground beef
1 garlic clove, grated
2 avocados
3 limes
1/2 cup cilantro, chopped
1/2 cup sour cream
2 chipotle peppers, chopped
3 cups shredded cheese
1 tomato, chopped
1 jalapeno, sliced
1 tablespoon olive oil
1 bag of tortilla chips
Instructions
Preheat oven to 400 degrees
Heat olive oil in a skillet over medium heat. Add garlic and cook for about a minute before adding the ground beef. Cook until browned.
Mix together the chili powder, cumin, cornstarch, salt, paprika, coriander and red pepper flakes. Add the spices and 1/4 cup water to the ground beef, mix together well and simmer.
To assemble the nachos place a layer of chips on a sheet pan and top with cheese. Add another layer of chips and top with the ground beef and more cheese. Bake in the oven for 6 minutes until the cheese is ooey gooey.
While the cheese melts make the guac and sour cream. For the guac mash together 2 avocados, 1/4 cup cilantro, juice of 2 limes and a pinch of salt in a bowl. For the sour cream, mix together the sour cream, chipotle, and juice of half a lime in a bowl.
Once the cheese is melted, top with guac, sour cream, tomatoes, jalapenos, and remaining cilantro.
