Sheet Pan Nachos

You can’t go wrong with nachos for dinner. Tortilla chips, spiced ground beef, lots of melty cheese, topped with fresh guac and chipotle sour cream.

Ingredients

  • 2 tablespoons chili powder

  • 1 tablespoon cumin

  • 2 teaspoons cornstarch

  • 1 teaspoon salt

  • 1 teaspoon paprika

  • 1 teaspoon coriander

  • 1/2 teaspoon red pepper flakes

  • 1 pound ground beef

  • 1 garlic clove, grated

  • 2 avocados

  • 3 limes

  • 1/2 cup cilantro, chopped

  • 1/2 cup sour cream

  • 2 chipotle peppers, chopped

  • 3 cups shredded cheese

  • 1 tomato, chopped

  • 1 jalapeno, sliced

  • 1 tablespoon olive oil

  • 1 bag of tortilla chips

Instructions

  1. Preheat oven to 400 degrees

  2. Heat olive oil in a skillet over medium heat. Add garlic and cook for about a minute before adding the ground beef. Cook until browned.

  3. Mix together the chili powder, cumin, cornstarch, salt, paprika, coriander and red pepper flakes. Add the spices and 1/4 cup water to the ground beef, mix together well and simmer.

  4. To assemble the nachos place a layer of chips on a sheet pan and top with cheese. Add another layer of chips and top with the ground beef and more cheese. Bake in the oven for 6 minutes until the cheese is ooey gooey.

  5. While the cheese melts make the guac and sour cream. For the guac mash together 2 avocados, 1/4 cup cilantro, juice of 2 limes and a pinch of salt in a bowl. For the sour cream, mix together the sour cream, chipotle, and juice of half a lime in a bowl.

  6. Once the cheese is melted, top with guac, sour cream, tomatoes, jalapenos, and remaining cilantro.
