Easy Cheesy Meatballs

I spent many years trying (and failing) to make good meatballs. This simple combination of pork, parmesan and milk soaked bread swimming in tomato sauce and topped with lots of cheese is the winner.  These make for great meatball sandwhiches.

Ingredients

  • 1 pound ground pork

  • 1 egg

  • 1 slice of bread

  • 1/4 cup milk

  • 1/4 cup parmesan cheese, grated

  • Salt and pepper

  • 1 onion, grated

  • 2 tablespoons olive oil

  • 2 cloves of garlic, grated

  • 2 tablespoons tomato paste

  • 1 28 ounce can whole tomatoes

  • 1 28 ounce can crushed tomatoes

  • 1 cup shredded mozzarella cheese

  • Bread for serving

Instructions

  1. Preheat oven to 450 degrees. Soak the bread in milk and set aside.

  2. Heat oil in a pot over medium heat. Add onion and garlic and cook for 5 minutes. Add tomato paste and cook for 2 minutes. Add tomatoes, season with salt and pepper and simmer for about 20 minutes.

  3. While the sauce simmers make the meatballs. Add the pork, egg, crumbled bread, parmesan to a large bowl and mix well to combine. Season with salt and pepper. Roll balls and place on sheet pan. Cook for 15 minutes.

  4. Transfer the meatballs to the sauce, top with mozzarella cheese and put in the oven for 10 minutes.

  5. Serve with crusty bread or pasta.
