Creamy Sundried Tomato Spaghetti
This is a quick and flavorful weeknight pasta full of cheese, cream, garlic and sundried tomatoes.
Ingredients
1 pound spaghetti
1 jar sundried tomatoes, sliced
1 1/2 cup cream
1/2 cup grated parmesan
2 tablespoons capers
3 cloves garlic, minced
1 lemon, juiced
1/4 cup parsley, chopped
2 tablespoons butter
Instructions
Bring a large pot of salted water to a boil and cook the pasta to al dente.
Heat butter in a large skillet over medium heat. Add the garlic and saute for 2 minutes. Add the cream and simmer until reduced by 1/3. Add the parmesan and sundried tomatoes and whisk to combine. Add the capers, parsley and lemon juice.
Once the pasta is cooked, add to the sauce and toss to combine. Enjoy!
