Chorizo Sandwich

This is such a satisfying and ridiculously easy and fast dinner (10 minutes!). Smoked chorizo is grilled crisp and layered in an egg bun with spicy mayo and banana peppers.

Ingredients

  • 4 links of smoked chorizo, sliced lengthwise and halfwise

  • 1/4 cup mayo

  • 1/4 cup Schug

  • 1/4 cup banana peppers

  • 4 egg buns

Instructions

  1. Heat grill to high

  2. Grill the chorizo until slightly charred and warmed through, about 3 minutes per side. Add the buns and toast for about 2 minutes.

  3. While the chorizo cooks mix together the mayo and Schug.

  4. Assemble the sandwich by smearing the spicy mayo on the bottom bun, top with 4 pieces of chorizo, and some banana peppers.

Takes 10 minutes
