Chorizo and Shrimp

This one pan dinner comes together in under 30 minutes with a combination of chorizo, onion, garlic, tomato and shrimp and plenty of flavorful broth to sop up with crusty bread.

Ingredients

  • 1 yellow onion, diced

  • 3 cloves garlic, grated

  • 1 tablespoon tomato paste

  • 1 pound ground chorizo

  • 1 pound jumbo shrimp, peeled and deveined

  • 1 14 ounce can diced tomatoes

  • 1/2 cup chicken stock

  • 1/2 cup white wine, optional

  • 1/4 cup parsley, chopped

  • Salt and pepper

Instructions

  1. Place shrimp in bowl with garlic, salt and pepper

  2. Heat oil in a skillet at medium heat and brown the chorizo

  3. Add onions, season with salt and pepper and cook until soft about 5 minutes.

  4. Add wine and reduce slightly then add tomatoes chicken stock.

  5. Bring to a simmer. Slide in the shrimp and cook through, about 2 minutes.

  6. Top juice of 1/2 lemon and parsley. Serve with remaining lemon and crusty bread.
