Caramelized Pork Chops with Cauliflower

In this convenient sheet pan dinner, sweet smoky pork chops are roasted at high heat with cauliflower that gets a kick from olives and lemon juice.

Ingredients

  • 2 large bone in pork chops

  • 2 teaspoons brown sugar

  • 1 teaspoon cumin

  • ½ teaspoon pepper

  • 2 cloves garlic, grated

  • 1 teaspoon salt

  • 1 teaspoon paprika

  • 1 head of cauliflower, chopped

  • 2 ounces pancetta, chopped

  • 2 tablespoons olive oil

  • ¼ cup parmesan cheese

  • ¼ cup green olives, chopped

  • 1 lemon

Instructions

  1. Preheat oven or grill to 450 degrees

  2. Mix brown sugar, cumin, garlic, salt, pepper and paprika and rub all over pork chops. Let sit about 15 minutes

  3. Place pork on one side of sheet pan, cauliflower and pancetta on the other

  4. Toss cauliflower with olive oil, salt and pepper

  5. Place in oven and cook for 15 minutes. Turn over pork chops and toss cauliflower. Continuing cooking until pork is cooked through (internal temperature of 140 degrees), about 10 minutes more.

  6. Let pork rest about 5 minutes before slicing.

  7. Add olives and parmesan to cauliflower.

  8. Serve together with lemon.
