Cajun Chicken with Creamy Gnocchi

Spicy, creamy, one pan delicious cajun chicken creamy gnocchi.

Ingredients

  • 1 package gnocchi

  • 1 pound chicken tenderloins

  • 1 tablespoon paprika

  • 2 teaspoons cayenne

  • 1 teaspoon salt

  • 1 teaspoon dried thyme

  • 2 tablespoons butter

  • 2 tablespoons olive oil

  • 1 cup heavy cream

  • 1/2 cup white wine

  • 1/2 cup chicken stock

  • 1/2 cup grated parmesan cheese

  • 1/4 cup parsley, chopped

Instructions

  1. Season the chicken with the paprika, cayenne, salt and thyme. Heat butter and olive oil in a large saute pan over medium high heat. Saute the chicken for 5 minutes per side and then remove and set aside.

  2. Add the wine to the saute pan and simmer for 2 minutes. Add the chicken stock, cream and gnocchi and simmer for 5 minutes until the gnocchi is tender.

  3. While the gnocchi cooks slide the chicken into small pieces. Add the chicken to the gnocchi. Toss with parmesan cheese and parsley before serving.

Takes 20 minutes
