Boneless Garlic Buffalo Wings

A big plate of perfectly delicious boneless wings is a weeknight treat!

Ingredients

  • 1 pound boneless chicken breast, cut into chunks

  • 1 cup buttermilk

  • 1 egg

  • 1 teaspoon paprika

  • 1 teaspoon cumin

  • 1 teaspoon garlic powder

  • 1/2 teaspoon cayenne

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 1/2 cup flour

  • 1 stick butter

  • 1/2 cup hot sauce (I prefer Franks)

  • 1 tablespoon Worcestershire

  • 2 cloves garlic, grated

  • Peanut oil for frying

  • Blue cheese dressing and celery sticks for serving

Instructions

  1. Heat about 2 inches of oil in a large deep skillet

  2. In a large bowl mix together the buttermilk, egg, paprika, cumin, cayenne, salt and pepper. In a separate bowl add the flour and garlic powder. Coat the chicken with the buttermilk mixture then the flour. Repeat to double coat.

  3. Once the oil is hot add the chicken in a single layer. Cook for about 5 minutes per side until golden brown and cooked through. Remove and drain on a wire rack. Repeat with the remaining chicken.

  4. While the chicken cooks make the buffalo sauce. Melt the butter over medium heat in a small pot. Add the garlic and cook for 2 minutes. Add the hot sauce and Worcestershire and mix to combine. Simmer for a few minutes until the chicken in done.

  5. Once the chicken is done add to a large bowl and toss with the buffalo sauce.

  6. Serve with blue cheese dressing and celery sticks.
