All Day Bolognese

This is my ultimate comfort food. Pasta with (Good) Meat Sauce is great during the week, but when you need the really good stuff try this slowly simmered bolognese.

Ingredients

  • 1 pound ground beef

  • 2 tablespoons butter

  • 2 tablespoons olive oil

  • 1 yellow onion, grated

  • 2 celery hearts, finely diced

  • 2 carrots, finely diced

  • 2 garlic cloves, grated

  • 1 cup red wine

  • 1 cup whole milk

  • 1 28 ounce can whole tomatoes

  • 1 bay leaf

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • Pinch of ground nutmeg

  • 1 pound pasta (I like tagliatelle)

  • Grated parmesan for serving

Instructions

  1. Heat oil and butter in a pot. Add the onion and garlic and cook for 3 minutes. Add the celery and carrot and cook for another 3 minutes.

  2. Add the ground beef and season with salt and pepper. Cook the meat breaking it up with your spoon until cooked through, about 5 minutes.

  3. Pour in the wine and cook until almost all the wine has evaporated. Pour in the milk, add the nutmeg and bring to a simmer. Add the tomatoes, breaking them up with your spoon, and stir to combine. Add the bay leaf and reduce to a low simmer. Simmer for at least 2 hours.

  4. Bring a large pot of salted water to a boil. When the water is boiling cook the pasta to al dente. Drain reserving 1 cup of pasta water. Add the pasta to the sauce along with some of the pasta water and stir to combine. Serve with grated parmesan.
