BLT Taco

This is remarkably simple, but freaking delicious! All the flavors of a BLT (and more) in a taco - herbed yogurt topped with bacon, lettuce, tomato, and avocado in a charred tortilla. Ready in 10 minutes!

Ingredients

  • 8 slices of bacon

  • 1 cup greek yogurt

  • 1/4 cup parsley, finely chopped

  • 1/4 cup dill, finely chopped

  • 1 cup lettuce, chopped

  • 1 tomato, chopped

  • 1 avocado, diced

  • 4 flour tortilla shells

Instructions

  1. Heat a skillet of medium heat. Cook the bacon for about 10 minutes, flipping occasionally until they are perfectly cooked and not too crisp.

  2. While the bacon cooks mix the yogurt and herbs together.

  3. Warm the tortilla shells in the oven or on the stove.

  4. To assemble the taco, spread the yogurt first then top with bacon, lettuce, tomato, and avocado. Enjoy!
