BLT Pasta

Pasta tossed with arugula pesto, bacon and sundried tomatoes. So tasty!

Ingredients

  • 2 cups arugula

  • 1/2 cup pine nuts

  • 1/2 cup parmesan cheese, grated

  • 1/2 cup olive oil

  • 2 teaspoons salt

  • 1 lemon, juiced

  • 1/2 cup sundried tomatoes, sliced

  • 4 slices of bacon, chopped

  • 1 pound fusilli

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente.

  2. In a large skillet cook the bacon until just crisp and remove. Drain most of the bacon fat.

  3. In a food processor add the arugula, pinenuts, parmesan cheese, lemon juice, olive oil and salt. Pulse until smooth.

  4. When the pasta is cooked add to the skillet with about 1/2 cup of pasta water. Toss with the pesto and top with bacon and sundried tomatoes.

Takes 15 minutes
