BLT Pasta
Pasta tossed with arugula pesto, bacon and sundried tomatoes. So tasty!
Ingredients
2 cups arugula
1/2 cup pine nuts
1/2 cup parmesan cheese, grated
1/2 cup olive oil
2 teaspoons salt
1 lemon, juiced
1/2 cup sundried tomatoes, sliced
4 slices of bacon, chopped
1 pound fusilli
Instructions
Bring a large pot of salted water to a boil and cook the pasta until al dente.
In a large skillet cook the bacon until just crisp and remove. Drain most of the bacon fat.
In a food processor add the arugula, pinenuts, parmesan cheese, lemon juice, olive oil and salt. Pulse until smooth.
When the pasta is cooked add to the skillet with about 1/2 cup of pasta water. Toss with the pesto and top with bacon and sundried tomatoes.
Takes 15 minutes
