Bacon and Corn Tortellini

Super simple and ridiculously delicious - crispy bacon, fresh corn and cheesy tortellini!

Ingredients

  • 2 ears of corn, kernels removed

  • 4 slices bacon, chopped

  • 2 packages fresh cheese tortellini

  • 2 tablespoons butter

Instructions

  1. Bring a large salted pot of water to a boil

  2. Add bacon to a large skillet and heat to medium. Cook until crisp and remove from the pan. Add the corn to the bacon grease and cook for about 5 minutes.

  3. Add the tortellini to the boiling water. Once cooked, remove from the water and add to the corn. Add the butter and bacon to the skillet and toss well until the butter is melted.

Takes 15 minutes

Serves 4
