Asparagus Noodle Stir Fry

This quick stir fry has a tangy sauce and crisp asparagus and peppers.

Ingredients

  • 2 cloves garlic, grated

  • 1 tablespoon ginger, grated

  • 2 tablespoons soy sauce

  • 1 tablespoon sambal

  • 1/4 cup tahini

  • 1 lime, juiced

  • 1 teaspoon Szechuan pepper, crushed

  • 4 packages of ramen

  • 2 red fresno chiles, sliced

  • 1 bunch asparagus, chopped

  • 1 tablespoon canola oil

  • Salt and pepper

Instructions

  1. Bring a large pot of salted water to a boil and cook the ramen to al dente.

  2. Mix the garlic, ginger, soy sauce, sambal, tahini, and lime together.

  3. Heat the oil in a large skillet over medium high heat. Add the asparagus and chiles season with salt and pepper and saute until just tender. Toss with the ramen, some pasta water and sauce. Top with Szechuan peppercorns.

Takes 15 minutes
